Welcome to Fork Knife and Love, a blog about food, cooking, and everything in between! My name is Erica, a former Graphic Designer from New York, now living in the beautiful countryside of Connecticut. I am a deli owner, cancer survivor, and mom to three high-spirited, but wonderfully charming children. I guess you can say I wear many hats on this life journey. First and foremost, I love to cook, eat what I cook, and invent new recipes for the everyday family. I am a food fanatic, and admirer of all food genres. Spicing things up with an array of ingredients, and creating new recipes that my family loves will always be my joy in life.
In January 2010, I was diagnosed with Hodgkin’s Lymphoma, a rare but very treatable cancer. I was only 32 years old, and had 2 very small children to care for at the time. I battled, I won, and now I am 5 years cancer-free. My sense of having a purpose, and fulfilling my dreams have led me to creating this food blog. As I regained my energy, I realized that I never wanted continue to do something I did not absolutely love. Slowly, I began to help my husband in our delicatessen, and I soon realized that cooking was an outlet that gave me such happiness. It nourished my soul in ways that I never could have imagined. Soon my famous weekly meatballs and baked eggplant morphed into re-creating our sandwich menu, opening a catering business, and starting this food blog!
Cooking has always been a long time passion of mine, and I soon realized that I could share my recipes with the world. I have no culinary training, but have been a food enthusiast for years. In fact, I am a great consumer in many food establishments in the greater Westchester County, New York City, and Fairfield County areas. I find my inspiration within many of these establishments, and other visual resources.
