This weekend has been a whirlwind. Oy Vey! My daughter is having her ninth birthday, and juggling, planning, and creating party favors can really become exhausting while managing the daily household errands. I actually decided to take a few days to plan the week ahead, and enjoy an extended Mother’s Day in the process. Yes, a mini blogging vacation – or slight departure from my daily cooking duties. Let me tell you, it has been a well deserved Mother’s day present!
But, one must return to what she loves so dearly…And, that my friends are bagels covered in every spice!
I am an absolute bagel addict, and I am surprised these New York bites of heaven managed to survive in my household this long. Ok, so it was just a day, but I secretly ended up tucking these doughnut-shaped creations behind some items in my pantry. In my household, hiding these golden-brown glazed loves with stealth mama protection, can be a major challenge. Soft, and crispy when first bitten – a versatile treat for any topping you so desire. These little breakfast staples are the perfect breakfast, lunch, or snack food – making them hard to resist.
To honor this wonder of doughy-ness that I so love, I decided to create a spin on the traditional bagels and lox dish – a bake with all those wonderful fixings that are tasty. This Everything Bagel Lox Bake is full of creamy goodness, salty flavor, and it is a great way to start your morning. Serve as a brunch casserole or create this pretty dish for any special event that you see fit. It is a wonderful bake filled with awesome flavors that will become a great addition to your party going needs.
And, the best part is the addition of the lox to comfort your inner soul. Lox is a brined salmon delicacy, distinctive in its salty flavor with a bright vibrant orange color to appeal to your eyes. It is usually served on a bagel with cream cheese, and garnished with capers or other fixings of your choice. You can also serve this with smoked salmon to achieve a more smokey flavor. Whatever you prefer!
Oh no, I just did not stop there! Of course, I had to add a little more comfort with some heavenly eggs, and fluff things up a bit. Breakfast just would not be the same….

Get ready for a meal fit for a queen or king.
- 4 Everything Bagels
- 6 beaten eggs
- 1 cup of milk
- ½ teaspoon of salt
- ½ cup of chopped lox or smoked salmon
- ¾ cup of cream cheese softened and cubed
- Chop the bagels into ½ inch pieces and place in a 9 x 12 baking dish.
- Beat the eggs and milk until well blended.
- Pour the egg mixture over the chopped bagels. Give it a stir. Let the mixture sit for 1 hour to absorb into the bagels.
- Chop the lox or smoked salmon and add to the bagel mixture along with the capers. Stir.
- Add the cubes of cream cheese evenly through the mixture and loosely mix until dispersed.
- Bake the lox bake for 40 minutes at 350º degrees until the fluffy (make sure the internal temperature reaches 175º degrees)
